How to Make Lavender Syrup
My honey lavender syrup is simple: combine water, honey, stevia, dried culinary lavender, and a touch of vanilla extract. I like to use a 2:1 ratio of water to sugar but some recipes call for a 1:1 ratio. It will all depend on how sweet you want the lavender simple syrup to be. Simmer for 3 minutes, stir for a couple of minutes to cool, strain, and cool further. That's it! The end result is a light, floral syrup that goes well in any beverage.
Lavender Syrup Recipe
This lavender syrup recipe can be tweaked depending on what you're looking for. If you want to use all white sugar, you can. You can also use all honey and omit the stevia. Or you can use any flavor you'd like in lieu of lavender (rosemary, basil, mint, rose, jalapeno.. the list goes on!).
The inspiration behind this recipe is from Milk and Honey in Nashville, TN. They have outstanding brunch and I always get their honey lavender latte (I HIGHLY recommend trying it if you haven't been or are going to Nashville soon!).
Ingredient Highlights
- Honey - most simple syrup recipes call for granulated sugar but I love honey for this recipe. It adds a strong floral flavor that compliments the lavender so well!
- Lavender - be sure to use culinary grade lavender, which you can find on Amazon or at a nice spice shop. You can use more or less than what's called for in the recipe, depending on how strong you want the lavender flavor to be.
- Stevia - out of all of the nonnutritive sweeteners, I like to use stevia because it comes from a plant. You can use your preferred no-calorie sweetener or more honey!

Making simple syrup is easy for the most part, but you want to avoid burning the sugar. Be sure to let it simmer for the amount of time specified in the recipe (here it's 3 minutes) and stir continuously. This will prevent the sugar from burning!

Ingredients
- 1 cup water
- ⅓ cup (113g) honey
- ½ cup dried culinary lavender
- 3 Tbsp stevia (or other no-calorie sweetener)
- ½ tsp vanilla extract
Instructions
- Combine all ingredients in a small saucepan over medium heat.
- Whisk until honey is dissolved.
- Bring to a simmer and simmer for 3 minutes.
- Immediately remove from heat and stir continuously for 2 minutes.
- Strain lavender and pour syrup into a small container.
- Let cool at room temperature and use or store in refrigerator.
Notes
- You can save the candied lavender to use as a garnish for lattes or cocktails!
- Store in refrigerator for up to 2 weeks.
- You can use any ingredient in lieu of lavender: rosemary, lemon, lime, jalapeno, rose, mint, basil, etc.!
