Honey Lavender Syrup

Honey lavender syrup is floral and full of flavor. It's the perfect addition to any latte, cocktail, or mocktail! Plus it takes less than 10 minutes to make and is lower in sugar than traditional simple syrups.


Units Scale
  • 1 cup water
  • 1/3 cup (113g) honey
  • 1/2 cup dried culinary lavender
  • 3 Tbsp stevia (or other no-calorie sweetener)
  • 1/2 tsp vanilla extract


  1. Combine all ingredients in a small saucepan over medium heat.
  2. Whisk until honey is dissolved.
  3. Bring to a simmer and simmer for 3 minutes.
  4. Immediately remove from heat and stir continuously for 2 minutes.
  5. Strain lavender and pour syrup into a small container.
  6. Let cool at room temperature and use or store in refrigerator.


  • You can save the candied lavender to use as a garnish for lattes or cocktails!
  • Store in refrigerator for up to 2 weeks.
  • You can use any ingredient in lieu of lavender: rosemary, lemon, lime, jalapeno, rose, mint, basil, etc.!
