Roasted Cauliflower Nutrition
Cauliflower can be underrated when it comes to nutrition. It's mostly water and therefore contains few calories for a large portion (1 cup of raw/steamed cauliflower contains ~25 calories; keep in mind this just accounts for the cauliflower, no prep methods like olive oil for roasting). It's an excellent source of vitamin C and vitamin K as well. Fun fact: pairing it with a fat source (like olive oil) can increase vitamin K absorption because vitamin K is a fat soluble vitamin!
One cup of cauliflower also contains 3g of fiber, which is an important nutrient to consume daily. Cauliflower also contains B vitamins like B6 and folate, which are important for many bodily functions.
How to Roast Frozen Cauliflower
Frozen cauliflower can be used to make this roasted ranch cauliflower. Simply replace fresh with frozen in the recipe below. However, since frozen cauliflower is frozen, I would add 5-10 minutes (or longer, depending on your oven) to the cook time. You could also steam the frozen cauliflower before tossing with olive oil and seasonings, then roast it.
Roasted Ranch Cauliflower Ingredient Highlights
- Cauliflower - I prefer to use fresh but you can use frozen (see section above)! Cauliflower is a great source of vitamins C and K, and rich in other nutrients like fiber and B vitamins.

This can be a result of not cooking cauliflower long enough! Simply continue cooking it until it reaches your desired consistency.
Cauliflower is a pretty bland vegetable, which only means there are so many great options to spice it up with! One of my favorites is this roasted ranch cauliflower, which simply uses ranch seasoning, salt, and pepper.
Heat will destroy some of the nutrients but roasting is a better alternative than boiling, which can destroy nutrients and cause them to leach out into the water. Using olive oil (or another cooking fat) when roasting can actually improve the absorption of some nutrients like vitamin K, which is found in cauliflower!

Ingredients
- 2-3lbs (1340g; ~1 head) cauliflower
- ¼ cup (54g) olive oil
- ⅓ cup (45g) ranch seasoning
- 1 tsp ground black pepper, optional
Instructions
- Preheat oven to 375 degrees and line baking sheet with parchment paper.
- Rinse cauliflower.
- Chop cauliflower into uniform bite-sized pieces.
- Add cauliflower to a large bowl and drizzle with olive oil and seasonings.
- Toss until evenly coated.
- Spread evenly onto baking sheet.
- Roast for 40-45 minutes, then broil on High for 2-3 minutes to get the pieces extra crispy.
- Let cool and enjoy!
Notes
- Pay attention to the cauliflower as you broil it - some ovens are different than others and you don't want it to burn!
- Store in an air-tight container for up to 5 days or freeze for up to 2 months.
- Serve as an appetizer or with a lean protein and starch for a balanced meal!
