This veggie combination may not be a common one but they go so well together. In addition, they're both packed with nutrients like fiber and vitamin C (read more on broccoli and brussels nutrition below!). They're a great base to any salad because they're sturdier cruciferous veggies. Therefore, they take a while to wilt after dressing is added. Compared to usual salad lettuce and spinach, this is unique! This means this broccoli and brussels sprouts slaw makes for great leftovers for the lunch the next day!

I am a huge fan of making salad dressings at home for multiple reasons:

- They taste WAY better!
This lemon dijon vinaigrette is definitely one of the many stars of the show in this recipe. First off, it pairs with all of the ingredients so well. Plus it's a better-for-you alternative to store-bought dressings!
Broccoli and Brussels Sprouts Slaw Ingredient Highlights
- Broccoli slaw - you can make your own by grating broccoli stems or you can buy packaged broccoli slaw in the salad section at the grocery store! I love packaged broccoli slaw for two reasons: first, it's just easier. Second, the mix usually includes some cabbage and carrots 🙂 Broccoli stems contain similar nutrients as the florets: fiber, vitamins A and C, potassium, and folate.
- Brussels sprouts - these little balls of cabbage can have a bad rep but are so delicious if prepared the right way (like this salad!). They contain fiber, and vitamins K and C.
- Fruit - tart green apple and sweet pomegranate seeds go soo well in this salad. However, you can use any flavor apple or pear, or dried cranberries instead of pomegranate (I suggest looking for the no-sugar-added kind)!
- Pistachios - pistachios add a salty crunch plus healthy fats, fiber, and some B vitamins! Other nuts that would be good in this recipe would be almonds, cashews, walnuts, or pecans.
- Parmesan cheese - parmesan cheese tends to be lower in fat compared to creamier cheeses. But you can sub any cheese you'd like in this recipe or omit altogether!
- Lemon vinaigrette - the homemade lemon vinaigrette greatly outweighs the little effort required to make it!

If you don't want or like broccoli slaw, you can sub any lettuce! Kale goes really well with this salad and could also be subbed for brussels sprouts.
My lemon dijon vinaigrette is made from lemon juice, dijon mustard, high quality EVOO, fresh shallot and garlic, and capers. Dijon goes so well in vinaigrettes and you can switch up flavors in so many ways!
Yes! I actually like it after it's sat for a few hours or even overnight. The broccoli and brussels are so sturdy (compared to regular lettuce or spinach that usually wilt after a few hours in dressing), so the salad doesn't get soggy. I love making this for dinner one night and bringing leftovers for lunch the next day!

Ingredients
For the lemon dijon vinaigrette
- 1 cup (180g) EVOO
- ¾ cup (75g) white balsamic or champagne vinegar
- ¼ cup (59g) fresh lemon juice (~1 lemon)
- 2 Tbsp dijon mustard
- 2 cloves garlic, finely diced
- 1 shallot, finely diced
- 1 tsp capers, finely diced
- Salt & pepper to taste
For the broccoli and brussels sprouts slaw
- 1lb (491g) brussels sprouts, finely sliced/chopped
- 1-12oz (340g) bag broccoli slaw
- 1 large (267g) green apple, finely diced
- ½ cup (109g) pomegranate seeds
- ½ cup (40g) shaved parmesan
- ¼ cup (40g) shelled pistachios
- ½ cup lemon dijon vinaigrette
Instructions
For the lemon dijon vinaigrette
- Combine all ingredients in a large mason jar or small mixing bowl.
- Whisk or shake until evenly combined.
- Drizzle onto salad or store in an air-tight container in the fridge for up to 2 weeks.
For the slaw
- Combine all ingredients in a large mixing bowl, drizzling the dressing on last.
- Toss until evenly combined.
- Serve & enjoy!

- Store leftover salad in an air-tight container in the fridge for up to 3 days. If planning on having salad leftover, separate out desired portion to put dressing on (salad will last longer without dressing on it).
- Store salad dressing in an air-tight container in the fridge for up to 2 weeks.
- You can use any fruit in lieu of pomegranate seeds and apple: mandarin oranges, dried cranberries/raisins, pears, strawberries, blueberries
