Overnight Oats with Coconut Milk
If you LOVE coconut, you can definitely use coconut milk to make this coconut cream overnight oats recipe even more coconut-y. I use regular milk to get extra protein but coconut milk would work great here!
High Protein Overnight Oats
These overnight oats call for coconut yogurt, which gives the recipe extra protein. More protein comes from the milk (if you use cow's or soy milk) and chia seeds. Oats contain some protein but not much, so you can also add some protein powder if you'd like!
Ingredient Highlights
- Old-fashioned oats - you can use quick or old-fashioned oats but I don't recommend using steel cut. They absorb liquid differently and won't give you the same result!
- Milk - any milk will work. If you love coconut, you can use coconut milk!
- Greek yogurt - I love using Siggi's coconut Greek yogurt in this recipe because it's so good and low in added sugar. You can use plain or vanilla!
- Chia seeds - these tiny seeds are full of fiber and healthy fats, plus they absorb liquid well and add a nice crunch!
- Shredded coconut - I recommend using unsweetened coconut to cut back on added sugar.
Recipe FAQ
I highly suggest using milk over water in this recipe. Any milk, especially oat, cow's, or soy milk will give you a creamy texture. You also may not be using enough liquid! Simply add a few splashes of milk, mix, and see if that helps. Repeat until you reach your desired creaminess!
It is not. I love using it because it adds protein and probiotics (and more coconut flavor in this case) but it's optional!
Store them in an air-tight container in the refrigerator. I love prepping a big batch ahead of time in a large container and portioning some out each morning for breakfast. It's super easy, delicious, and filling!

Ingredients
- 1 cup (26g) milk of choice
- ½ cup (60g) old-fashioned oats
- ¼ cup (73g) coconut Greek yogurt (I love Siggi's!)
- 1 Tbsp chia seeds
- 1 Tbsp unsweetened shredded coconut
Instructions
- Mix all ingredients in a small container or mason jar.
- Stir until combined.
- Store in the refrigerator overnight or at least 4 hours.
- Top with a sprinkle of coconut, slivered almonds, or more chia seeds and enjoy!
Notes
- You can use any milk in this recipe; coconut milk would give these oats even more coconut flavor!
- Greek yogurt is optional, but I love using it because it adds more coconut flavor, protein, and probiotics!

Hi Isabella! Same! I'm all about easy breakfasts too. I'm not sure about the steel cut oats, I haven't tried! My initial thought is no because they don't absorb liquid the same way as old-fasioned.
