– 1-15oz can chickpeas, rinsed and drained (265g) – ⅓ cup (100g) natural almond butter (or any nut butter) – ¼ cup (85g) pure maple syrup – ¼ cup (63g) milk of choice – 2 Tablespoons old-fashioned oats – 2 teaspoons pure vanilla extract – ½ teaspoon salt – ½ cup (100g) mini chocolate chips
1. Add all ingredients except chocolate chips to a food processor or blender. 2. Blend on high until smooth. I recommend scraping down the sides to make sure you get all of the chunks! 3. Using a rubber spatula, scrape the cookie dough hummus into a medium bowl (at least big enough to fit 2-3 cups). 4. Fold in chocolate chips. 5. Refrigerate for 1-2 hours and enjoy with animal crackers, pretzels, and/or apple slices!
