Tomato Basil Pasta

Healthy & dairy-free!

Ingredients

– Olive oil – Fresh garlic (or 4 Tbsp minced) – Fresh cherry tomatoes – Basil leaves, plus more for garnish – Salt & pepper to taste

Directions

1. Heat olive oil in a large saucepan on low heat. 2. Add garlic & sauté until fragrant & golden brown. 4. Add cherry tomatoes & let them cook until they start to pop.  Season with salt & pepper to taste. 5. Once most of the tomatoes have popped, add them to a blender with fresh basil. 6. Blend on high until creamy. 7. Pour back into the saucepan to keep warm or enjoy immediately!
