Easy Creamy Tomato Sauce

dairy-free!

Ingredients

– 3 Tbsp olive oil – 5 cloves fresh garlic (or 4 Tbsp minced) – 7 cups fresh cherry tomatoes – 3 basil leaves, plus more for garnish – Salt & pepper to taste

Directions

1. Heat olive oil in a large saucepan on low heat. 2. Mince fresh garlic cloves.  Turn heat up to medium and add garlic. 3. Sauté garlic until fragrant and golden brown. 4. Add cherry tomatoes and let them cook until they start to pop.  Season with salt and pepper to taste. 5. Once most of the tomatoes have popped, add them to a blender with fresh basil. 6. Blend on high until creamy. 7. Pour back into the saucepan to keep warm or enjoy immediately!
