Carrot Cake Baked Oatmeal

Ingredients

FOR THE OATMEAL BARS – Old-fashioned oats – White whole wheat flour (or AP or whole wheat flour) – Ground cinnamon, ginger, & nutmeg – Baking powder – Salt – Olive oil, or any neutral oil – Pure maple syrup – Milk of choice, room temperature – Large eggs, room temperature – Vanilla extract – Shredded carrots (~3-4 large carrots) – Chopped walnuts or pecans – Unsweetened shredded coconut – Golden raisins

FOR THE PROTEIN POWDER ICING – Powdered sugar – Vanilla whey protein isolate powder – Milk or water – Cream cheese extract or vanilla extract

1. Whisk oats, flour, baking powder, spices, & salt in a small bowl & set aside. 2. In a large bowl, whisk oil, maple syrup, milk, eggs, & vanilla. 3. Combine wet and dry ingredients & whisk until combined. 4. Fold in carrots, nuts, coconut, & raisins. 5. Pour batter into prepared baking dish. 6. Bake 25-30 minutes, or until baked in the center. 7. While bars cool, in a small bowl, whisk icing ingredients. 8. Drizzle icing over cooled bars. 9. Let icing harden, slice, & enjoy!
