– 2 cups (429g) shredded chicken breast – 8oz (227g) light cream cheese (Neufchatel cheese) – 2/3 cup (178g) low-fat plain Greek yogurt – 2/3 cup (89g) low-fat shredded mozzarella – 1/2 cup (227g) buffalo/hot sauce – 1/2 cup (67g) finely diced celery – 1/2 cup (43g) shredded carrots – 1/4 cup (30g) Ranch seasoning (2 packets) – Optional toppings: shredded low-fat cheddar cheese, sliced green onion, blue cheese
1. Preheat oven to 375 degrees and prepare an 8×8″ baking dish. 2. Combine all ingredients in a large mixing bowl and stir until evenly combined (make sure the cream cheese is mixed through!). 3. Pour into baking dish and top with shredded cheese(s) if desired. 4. Bake 40-50 minutes, or until cheese is bubbly and golden. 5. Let cool ~10 minutes, top with green onion and more cheese if desired, and serve with raw veggies and/or chips!
