Chocolate Black Cupcakes

Ingredients

FOR THE CUPCAKES – cake flour, sifted – black cocoa powder, sifted – Dutch-processed cocoa powder, sifted – baking soda – baking powder – salt – olive oil – pure maple syrup – low-fat plain Kefir – pure vanilla extract – mashed banana – large eggs – brewed coffee

FOR THE FROSTING – ripe avocados – powdered sugar – black cocoa powder – Dutch-processed cocoa powder – cornstarch – salt

FOR THE CUPCAKES 1. Combine flour, cocoa powders, baking soda, baking powder, and salt. Set aside. 2. In a large mixing bowl, add oil, syrup, kefir, vanilla extract, and mashed banana. Mix until combined. 3. Add eggs and stir until combined. 4. Slowly add dry ingredients to wet, and mix by hand. 5. Stir in coffee. 6. Fill each cupcake tin ½ of the way full. 7. Bake 18-20 minutes.

FOR THE FROSTING 1. Combine all ingredients in a blender, food processor, or large mixing bowl using a hand mixer. 2. Scrape the sides and bottom of the bowl as needed to ensure thorough mixing. 3. Generously frost the cupcakes. Enjoy!
