Air Fryer Peach Crisp

Ingredients

FOR THE CRISP TOPPING: – 1 cup (106g) old-fashioned or rolled oats – ½ cup (83g) white whole wheat flour – ½ cup (70g) unsalted chopped pecans – ⅓ cup (52g) olive oil – ¼ cup (30g) brown sugar, light or dark – 2 Tablespoons pure maple syrup (or honey) – 1 teaspoon pure vanilla extract – ½ teaspoon ground cinnamon – ¼ teaspoon salt

FOR THE PEACH FILLING: – 6 fresh peaches, sliced into ¼" slices (~5 cups, 636g) – ¼ cup brown sugar, light or dark – 2 Tablespoons pure maple syrup (or honey) – 2 teaspoons pure vanilla extract – ½ teaspoon ground cinnamon

FOR THE PEACH FILLING: 1. Preheat air fryer to 350 degrees Fahrenheit and spray a 9x9" pie dish with nonstick cooking spray. 2. Combine all ingredients in a large bowl. 3. Stir until peach slices are evenly coated. 4. Transfer peaches to prepared pie dish. Set aside.

FOR THE CRISP TOPPING: 1. Combine all ingredients in the same bowl as the peach filling. 2. Stir until combined. The texture should be clumpy and resemble wet sand. 3. Evenly spread over peach filling in pie dish. 4. Bake for 35-40 minutes, or until top is golden brown and filling is bubbly. 5. Let cool for 10-20 minutes and enjoy!
