Easy Cake Pops Recipe



For the Cake

  • 1 box of your favorite white cake mix
  • 3 Tbsp of your favorite vanilla frosting

For the Coating

  • 1 12-oz bag of Wilton or Ghiradelli melts/melting chocolate
  • 1 tsp shortening (Crisco) or coconut oil
  • Sprinkles (for decoration)


  1. Bake cake according to the directions on the box. If you want to add food coloring to change the color of the cake, we recommend adding the drops when you mix wet and dry ingredients.  We used 5 drops of red to make this pink cake. 
  2. Let it cool completely and thinly cut around the edges and peel the browned top and bottom layers off (these parts of the cake tend to be drier).
    **I recommend cutting the cake into fourths so it’s easier to trim the brown layers off!
  3. Now it’s time to get your hands dirty!  Crumble the cake into a big mixing bowl.
  4. Mix in 3 Tbsp of frosting.
    **Mix well! You don’t want to see any streaks of frosting in the cake mixture.
  5. Using your hands or small ice cream scoop, shape the cake into balls.  As you form the balls, place them onto a baking sheet lined with parchment paper.
  6. If you want to put sticks in the pops, melt the chocolate (see step #8). Dip the end of a stick into the chocolate and then into a cake pop.
  7. Place the cake balls in the freezer for 15-20minutes.
  8. As the cake balls are in the freezer, melt the candy melts in a microwave-safe bowl in 30-second increments until melted (be careful to not burn the melts!).  This is where the shortening or coconut oil will come in – if the chocolate is thick, stir in the shortening or coconut oil to help thin it out.
    **If you want to use food coloring to color the chocolate, be sure to use oil-based food coloring as opposed to traditional alcohol-based food coloring.  Alcohol-based food coloring will cause the chocolate to seize up and harden.
  9. Take the cake balls out of the freezer and gently spoon (or drizzle) melted chocolate onto each ball.  If you want to decorate them further with sprinkles, do it quickly after this step before the chocolate hardens!
  10. Once you have finished decorating the cake pops, store in an air-tight container at room temperature or keep in the freezer for future cravings!
