Crispy roasted chickpeas are a salty, crunchy snack that you may or may not be able to stop eating. They're easy and delicious, plus full of fiber, healthy fats, and protein!

Oven Roasted Chickpeas
Roasting chickpeas in the oven is simple and the end result is an addicting crunchy snack. If you like salty + crunchy, this recipe is for you! To make oven roasted chickpeas, drain and rinse canned chickpeas. Then, peel any noticeable skins off the chickpeas. If you want to ensure your chickpeas will be extra crispy (and retain crispiness), peel the skins off of each chickpea. This is extremely tedious but so worth it!
After removing the skins, place the chickpeas between paper towels to soak up excess moisture. Next, toss the chickpeas in olive oil and desired seasonings. Then evenly spread them out on a prepared baking sheet and roast! After a little under an hour, the chickpeas will be toasty and golden brown. Let them cool (if you can wait) and then enjoy! These are great by themselves or tossed into a salad like croutons or as a soup topping for some crunch.
Roasted Chickpeas Seasoning
I love truffle salt so that's what I used below but you could use any seasoning! You could add a couple of dashes of garlic powder for a garlic flavor or a teaspoon of Ranch seasoning for a Ranch flavor! If you like spicy, you could add a few dashes of cayenne pepper. The options are endless here!

- Chickpeas - you can use canned or dried. If you use canned, be sure to drain and rinse them; if you use dried, be sure to rehydrate, drain, and rinse them. Chickpeas are a source of protein, fiber, iron, and folate!
- Olive oil - this will help the chickpeas get nice and crispy while roasting, plus olive oil contributes some monounsaturated fats!
- Seasonings - like I said above, you can customize this however you want. I'm a big truffle salt fan so that's what I used below but you can substitute any seasoning you'd like!
Recipe FAQ
This could be for a couple of reasons. First, the skin around the chickpea retains moisture so it's important to remove any noticeable skins if not all of them. It's very tedious but will let your chickpeas get nice and crispy!
Second, you want to use enough oil and bake them long enough. They may look pretty golden brown by the time you take them out of the oven and that's okay! Obviously you don't want to burn them but letting them get a deep golden color usually indicates that they're crispy.
Roasted chickpeas will store great at room temperature in an air-tight container. No need to refrigerate them!
Although time consuming, I highly recommend doing this. The skin around the chickpea holds in moisture so removing it allows the chickpea to dry out and become extra crispy. It's easier than you may think to remove the skin: simply apply a little pressure to the side of a chickpea (be careful not to crush/mush it) and you'll notice the skin start to separate. Peel the skin off and discard!

Ingredients
- 2-15.5oz cans chickpeas, drained and rinsed
- 2 Tbsp olive oil
- 1 ½ tsp truffle salt (or seasoning of your choice)
- ½ tsp fresh ground pepper
Instructions
- Preheat oven to 375 degrees and line baking sheet with parchment paper.
- Drain and rinse chickpeas.
- Peel skins off of chickpeas and place skinned chickpeas on a plate lined with paper towels.
- Once chickpeas have been skinned, pat dry with more paper towels.
- In a medium bowl, toss chickpeas with olive oil and seasonings.
- Spread chickpeas out evenly onto baking sheet.
- Roast for 50-55 minutes, or until extra golden brown (but not burnt!).
- Let cool and enjoy!
Notes
- You can use any seasoning(s) you'd like! Even just salt and pepper are great!
- Crispy roasted chickpeas are a great alternative to croutons in a salad or as a soup topping for some crunch! They're also great as a snack on their own.
- Store at room temp for up to 5 days.
