Chipotle pulled pork is an easy summer cookout recipe or meal prep recipe for a busy week! Throw this pulled pork into the slow cooker for 4-5 hours and out comes a delicious, versatile meal!

Cut of Pork for Pulled Pork
I like to use a pork shoulder or pork butt because it's a tender cut of meat with plenty of fat. While I do trim most of the fat off (at least what's visible), there's still some marbling throughout the meat that keeps the end product juicy and delicious.
Chipotle Pulled Chicken
If you don't eat pork or aren't a pork fan, you can definitely substitute chicken! Either chicken breast or chicken thighs would work in this recipe. You may want to drizzle a little olive oil to maintain some moisture, especially in chicken breast, as it's lower in fat and can be drier.

- Pork - using a pork shoulder or pork butt is best for this recipe, as the marbling keeps the meat nice and juicy! I remove as much visible fat as I can before cooking.
- Chicken broth - this adds a little flavor as well as moisture to the chipotle pulled pork. You can use any broth you'd like!
- Chipotle peppers - I love using the chipotle peppers in adobo sauce because they add soo much flavor the pork and a slight kick!
- Worcestershire sauce + apple cider vinegar + mustard - these all give the pork more flavor in just the right amount.

This pork is great leftover (I actually use it as a meal prep recipe most of the time!). I love using it for pulled pork sandwiches, as a main dish with a veggie and starch side, mixed in with scrambled eggs, in tacos/burritos, in salads, or on top of nachos!
Trim excess fat off of the pork, season with salt and pepper, and place in a slow cooker. Top with chopped onion and chipotle peppers. Whisk chicken broth, spices, Worcestershire sauce, apple cider vinegar, and mustard in a bowl. Pour broth mixture over pork and cook!
This recipe is honestly great on its own (save the juices to pour over when reheating!) but any BBQ sauce or chipotle sauce is fantastic on the pork.

Ingredients
- 4-5lbs (1882g) pork shoulder (or butt), boneless, excess fat trimmed
- 1 ⅓ cup (323g) chicken broth
- 1 medium (267g) sweet onion, chopped
- 3-4 chipotle peppers (63g) in adobo sauce, chopped
- 2 Tbsp apple cider vinegar
- 1 Tbsp Worcestershire sauce
- 1 Tbsp yellow or spicy mustard
- 2 tsp garlic powder
- 1 tsp chili powder
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Trim any excess fat off of the pork. Leave some for flavor but remove any large pieces!
- In a medium bowl, whisk chicken broth, vinegar, Worcestershire sauce, mustard, and seasonings. Set aside.
- Place pork into Crock Pot. Season with salt and pepper.
- Sprinkle onion and peppers on top of pork.
- Pour broth mixture over pork.
- Cover and cook on high for 4-5 hours or low for 7-8 hours.
- Let cool for ~30 minutes, then shred in Crock Pot with 2 forks.
- Serve and enjoy!
Notes
- Store in an air-tight container in the refrigerator for up to 1 week or freezer for up to 3 months.
- Be sure to include any juice when storing to keep the moisture in!
- Add your favorite BBQ sauce or enjoy plain!
- Top with coleslaw on a sandwich or with as an entrée with a veggie and starch.
